Happy Sunday everyone! This Friday was midsummers eve here in Sweden so I’ve spent the weekend picking flowers, eating strawberries and celebrating the start of summer.
After a nice weekend I like to spend my Sunday relaxing and one thing that always slows down my pace and relaxes my mind is baking. Today my mission was to use up some very ripe bananas and what better way to do that than to make banana bread. As you may or may not know I spend quite a lot of time on Pinterest so every time I decide to bake or cook anything I have a look through my pins to see if I can find something I want to make. If I can’t find anything on my own boards I just do a quick search. Today I did find something in my Pinterest archives, this chai banana cake I pinned ages ago from Spoon Fork Bacon that just looks so amazing. I gave it a try and let me tell you it’s definitely the nicest banana bread I’ve ever tried. It also makes your home smell like heaven when you make it which is a plus.
I served mine with some plain whipped cream to balance out the spice-packed goodness but you can definitely have it just as it is.
